How cold does it actually get in Jacksonville?
Cold enough, often enough, to matter. North Florida sees freezing nights in a normal winter, and Duval County sits at the top of the state where that is routine rather than remarkable. Two details decide whether a given night is dangerous. The first is duration - water needs both a low enough temperature and long enough at it, which is why a brief dip an hour before dawn is far less likely to split a fitting than a long cold night. The second is location: inland sites run colder than the beaches at the same latitude, and low-lying ground collects cold air overnight, so a rural storage yard west of the city can freeze on a night the beaches do not. If you want a defensible answer for your own address rather than a rule of thumb, NOAA publishes the climate normals for the nearest station and that is a far better basis than general advice about Florida.
The Little Talbot job: two PEX joints split overnight

The part worth passing on is where it failed, because it was not random. Both bursts were at joints on a run that sat in an uninsulated bay with airflow through it, which is the coldest place in the plumbing and the first thing to go. Pipe in a heated interior cavity generally survives a night that destroys the same pipe eight feet away in a bay. That is why we look at where the plumbing runs before recommending anything - heat tape on the exposed section is worth more than a blanket over the whole coach, and it is a fraction of the cost.
What should I do if a freeze is forecast and the RV is in use?
Short-term measures, and they work well enough for a single night. Keep a small heat source running inside, open cabinet and closet doors so warmth reaches the plumbing runs behind them, and leave a tap dripping so there is movement in the line. If the coach has a heated and enclosed underbelly, make sure it is actually switched on rather than assuming it is. Disconnect the city water hose and drain it - a hose left connected and full is the first thing to freeze and it can split a fitting at the inlet. If you have heat tape on an exposed run, check it is powered before the temperature drops rather than after. None of that protects a coach through a genuine hard freeze over several days, but it covers the ordinary overnight event that Duval County actually gets.
And if the coach is being stored for the winter here?
Then do it properly, because this is far enough north that draining alone is a gamble. Low points, traps, the pump and the water heater all retain water even when the system looks empty, and that trapped water is what bursts a fitting. RV-specific non-toxic antifreeze pushed through the whole system is the thorough approach and it is what a Duval County coach should have. Two things are not optional. The water heater must be drained and bypassed first, because filling a tank with antifreeze wastes several gallons and achieves nothing, which is exactly why the bypass exists. And never put automotive antifreeze into a fresh water system - ethylene glycol is toxic, and RV antifreeze is a different product for precisely that reason. Write down every valve you move, because next spring you will not remember.
Where is the camping around Jacksonville?

Do you cover the beaches and the west side of Duval?

Can I use automotive antifreeze if I cannot find the RV kind?
No. Automotive antifreeze is ethylene glycol and it is toxic; RV antifreeze is a different product made for potable systems. If you are caught short, a thorough drain and a compressed-air blowout is the safer fallback rather than putting the wrong chemical into a fresh water system.
